Sigilo is a coffee farm dedicated to the sustainable cultivation of coffee, using responsible agricultural practices that minimise environmental impact and promote biodiversity across the Quindío and Norte del Valle regions of Colombia. Their work helps preserve the country’s coffee culture while contributing to a more sustainable future for coffee at origin, supporting more than 150 families involved in the coffee supply chain.

This exceptional Tabi coffee stands out for its complex flavour profile and innovative processing method: carbonic maceration.

The process begins with each picker carefully selecting the best coffee cherries. The cherries are then placed in a water-filled tank, where less-dense cherries, known as floaters, rise to the surface and are removed to ensure greater consistency and quality.

The selected cherries are then transferred to sealed fermentation vats, where they ferment for 72 hours in an oxygen-free environment. Under these conditions, microorganisms consume the naturally occurring sugars in the cherries, breaking them down and producing alcohol and CO₂. This controlled fermentation creates the conditions for carbonic maceration, resulting in a distinctive and complex cup profile.
